We are delighted to announce that Chef Steve Moghini will be joining Braeside Estate as Le Chef de Cuisine in 2022! Native of Switzerland, Steve is bringing with him over 30 years of international experience in the Culinary field as a Professional Chef and Culinary Educator.Champagne Lobster Risotto

His formal education includes an Applied Degree in Culinary Arts as well as a recent certificate in Food and Nutrition Management. In addition of being a true passionate for creating amazing food experiences and exploring the culinary arts through cultures, Chef Steve has worked in various parts of Switzerland, French Polynesia like Tahiti and Bora Bora, Muskoka and finally settled in our beautiful region of the Kawartha Lakes.

Welcome to Trees and Shrubs Pruning Workshop!

As a Gardener and Designer Julie gets so many questions about “What, when and how to prune?” that we decided to create an exciting workshop about it! We will share our knowledge and experience with you. For a greater learning environment, we are accepting only 8 participants so make sure to register earl! Here are more details about this unique 2 day workshop experience:

West Garden Braeside EstateThe first day is Sunday May 22nd, 2022:

Starting at 9:00 a.m.:

  • Warm Welcome and Group Introduction

9:30 a.m. to 10:30 a.m.:

  1. Tour of Braeside Estate (BE) including a brief chat about the making of our Award Winning Midnight in Paris Garden. BE is a 5 acre property that has been our landscape passion over the past 5 years.
  2. Observation of nature on the Brae Trail, including commentary about its concept, making and challenges
  3. Identification of pruning opportunities
  4. Discover the Lilac forest in full bloom

10:30 a.m. to 11:00 a.m.:

  1. Brief discussion about invasive plants versus native plants
  2. Visit of the South forest restoration project, still in the making with the help of goats
  3. YES! Meet our twin Pygmy Goats London & Paris

11:00 a.m. to 12:00:

  1. Understanding why we prune
  2. Theory about the art of pruning

12:00 p.m. to 1:00 p.m.:

  • Lunch time, please bring your own lunch (because nothing close by)

1:00 p.m. to 1:30 p.m.:

  • Examine the plant response to pruning: Effects, type of cuts and time of the year

1:30 p.m. to 2:00 p.m.:

  1. Health and Safety
  2. Discover  the best Tools of the Trade
  3. Learn how to sharpen your blades

2:00 p.m. to 4:00 p.m.:

  • Hands-on pruning experience of Paniculata Hydrangeas, Hicks Yews and Boxwoods

4:00 p.m. to 5 p.m.:

  1. Braeside Estate Gin Tasting in the artist’s studio, an old barn built in 1862
  2. Casual discussion about the joy of sculptures in the landscape with Sculptor Bruno Cantieni

The Second day is Sunday June 5th, 2022:

9:00 a.m. to 10:00 a.m.:

  1. Quick summary of previous training day
  2. Sharing your experience over the past two weeks
  3. Pruning questions and answers

10:00 a.m. to 11:00 am:

  • Hand on experience on pruning Red Twigs Dogwoods

11:00 a.m. to 12 p.m.:

  • Hand on experience on pruning Native Lilacs

12:00 p.m. to 1:30 p.m.:

  • Casual Gourmet Lunch with wine pairing experience, all prepared and served by Bruno the food lover & Sommelier

1:30 p.m. to 3:00 p.m.:

  1. Additional information about the common sense approach to pruning
  2. Low Maintenance Pruning
  3. Time for additional questions and answers
  4. Quick workshop evaluation survey and Conclusion

The Pruning Workshop Experience Fee is $375

Additional Information:

  1. The current Covid 19 Protocol will apply
  2. You have to bring your own hand pruner, long handle loppers and hand shears
  3. Gloves, rubber boots, sunglasses (safety glasses) and rain gear (in case)
